You guys know I’m a sucker for a great pasta dish, and this delicious creamy pasta with corn and tomatoes is no exception. It is a great combination of bright flavors from the corn and tomatoes, balanced with the creamy and slightly spicy sauce.
As summer is coming to an end in our neck of the woods, it’s bittersweet to say goodbye to the flavors of summer and trade those for the slight chill in the air and the cozy meals soon to come. This dish is hearty, satisfying, and total comfort food. Yet it has a cream sauce made from cashews (and plenty of seasonings), which might be a healthier alternative to other traditional cream sauces.
How this Vegan Creamy Cajun Pasta comes together
- Cook your pasta (and boil your cashews if needed).
- Saute the onions, and the corn, and meanwhile slice the tomatoes.
- Blend the sauce.
- Combine, and enjoy
You can see that this is one heck of an easy dish. Which is VERY welcome in my house, given the typical chaos happening on any given day. You can soak the cashews overnight, which can serve as a shortcut when you’re preparing the sauce. Alternatively, you can boil the cashews in a saucepan while you’re making the pasta. The goal is to get them softer for blending. Either way, this Vegan Creamy Cajun Pasta is really simple and really delicious.

Vegan Creamy Cajun Pasta
Ingredients
- 1/2 lb. pasta
- 1 tsp oil
- 1 onion finely chopped
- 1.5 cups corn
- 3/4 pint tomatoes sliced
- 2 cups cashews*
- 2 cups warm vegetable broth
- 1 tsp dijon mustard
- 1 tsp dried basil
- 1 tsp paprika or chili powder
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp oregano
- 1.5 tsp cumin
- 1/4 tsp thyme
- 1/4 tsp turmeric
- 3/4 to 1 tsp kosher salt
- 1/4 to 1/2 tsp black pepper
- 1 tbsp nutritional yeast optional
Instructions
- Cook pasta in salted water until just al dente.
- Meanwhile, add oil to pan with onions. Cook until translucent, then add 1.5 cups corn and cook another 3 min.
- Add the sliced tomatoes and set aside.
- Add the remaining ingredients to a blender and blend until very smooth.
- Serve with hot pasta and corn/tomato mixture.
