Ingredients
1/2lb.pasta
1tspoil
1onionfinely chopped
1.5cupscorn
3/4pinttomatoessliced
2cupscashews*
2cupswarm vegetable broth
1tspdijon mustard
1tspdried basil
1tsppaprika or chili powder
1tspgarlic powder
1tsponion powder
1tsporegano
1.5tspcumin
1/4tspthyme
1/4tspturmeric
3/4 to 1tspkosher salt
1/4 to 1/2tspblack pepper
1tbspnutritional yeastoptional
Instructions
Cook pasta in salted water until just al dente.
Meanwhile, add oil to pan with onions. Cook until translucent, then add 1.5 cups corn and cook another 3 min.
Add the sliced tomatoes and set aside.
Add the remaining ingredients to a blender and blend until very smooth.
Serve with hot pasta and corn/tomato mixture.
Notes
*Soak cashews overnight or boil them in water for 15 minutes during the pasta cooking time. This serves to soften the cashews for easier blending.
