This salad is a delicious mix of colors, textures and flavors with clementines, dried cranberries, walnuts, fresh mint, and a tangy orange vinaigrette.

There’s something so delicious about juicy, tangy citrus in a salad. With lots of clementines around the house for little hands to grab, mama had to sneak a couple to make this bowl of fresh goodness. I had bought some fresh mint recently too, along with endive and radicchio. And thus, this salad was born.
Texture is huge in here, from the chewy dried cranberries, crisp cucumbers and endive, to the crunchy walnuts. Adding fresh herbs to your salad will add incredible flavor, and I typically use cilantro, parsley, mint or tarragon. The mint coupled with the fruit in here was such a delicious combination.

SALAD INGREDIENTS (2 servings):
- 2 bulbs endive thinly slice
- 1/2 head radicchio thinly sliced
- 1/3 cup dried cranberries
- 1/4 cup chopped walnuts
- 2 clementines
- 1/2 cup finely chopped seedless cucumber
- 2 T fresh mint thinly sliced
DRESSING (4 servings):
Whisk together the following ingredients:
- 1/3 cup olive oil
- 2 T red wine vinegar
- zest and juice of 1 orange
- 2 teaspoons dried oregano
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
