Blueberry and Chickpea Salad with Maple Dijon Vinaigrette

This is a tangy and crunchy salad with all the right flavors and hearty ingredients to be a satiating lunch or light dinner! With a simple and sweet vinaigrette, this salad is a quick and easy favorite that we enjoy often.



Salad (hearty salad for 1)

  • 1 cup packed arugula
  • 3/4 cup cooked quinoa
  • 1 T chopped red onion
  • 1/3 cup blueberries
  • 2 T dried cranberries
  • 1/3 cup chickpeas
  • 2 T slivered, chopped or sliced almonds

Dressing (whisk together – makes extra to save!)

  • 1/4 cup olive oil
  • 1/8 cup white wine vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon Dijon mustard
  • 1 T maple syrup
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil
