Vegan Chili Soup

Ingredients

  • 1 small onion finely chopped
  • 3 medium carrots diced
  • 2 tbsp oil
  • 2 tbsp tomato paste
  • 2 cups vegetable broth
  • 1 15 oz. can pinto beans drained and rinsed
  • 1 15 oz. can black beans drained and rinsed
  • 1 tsp garlic powder
  • 3/4 to 1 tsp kosher salt
  • 1/4 tsp black pepper optional
  • 2 tsp chili powder
  • 2 tsp cumin
  • 1 tsp oregano
  • 1.5 tsp onion powder
  • 1/4 tsp turmeric
  • 1/4 tsp smoked paprika
  • 1 cup crushed tomatoes
  • Garnishes: blue corn tortilla chips sliced jalapenos, chopped fresh parsley

Instructions

  • In a large pot, add onions, carrots, and oil. Saute for ten minutes on medium heat, stirring every few minutes and a few tablespoons of water along the way if the mixture becomes too dry.
  • Add the remaining ingredients and stir well. Bring to a simmer, and cook partially covered for 15 minutes.
  • Serve and top with garnishes.
