Marinated White Beans
- 1 15 oz. can great northern or cannellini beans can use butter beans too
- 1 tbsp olive oil
- Juice of 1/2 lemon
- 3 tbsp fresh or dried chives
- 1 tbsp dried parsley
- 1/4 tsp each kosher salt, pepper, garlic powder
- 1/3 cup finely chopped sun-dried tomatoes packed in oil and drained, or the variety not in oil
Dressing
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 tbsp agave nectar
- 1 tbsp Dijon mustard
- Juice of 1/2 lemon
- 1/4 tsp each kosher salt, pepper, garlic powder
Other Salad ingredients
- 4 cups cubed Italian bread or baguette cut in 1 inch cubes
- 1 tbsp olive oil optional for drizzling onto bread cubes
- 1/4 tsp each kosher salt, pepper, garlic powder for bread cubes
- 2 tsp dried parsley
- 5 oz. spring mix or arugula or your favorite greens
- 3/4 cup sliced roasted red peppers
- 1/2 cup crumbled vegan feta
- 1 1/2 cups cherry or grape tomatoes halved
- 1/4 cup finely chopped red onions
To make the beans, mix all the Marinated Beans ingredients in a bowl.
Meanwhile, season the breadcrumbs and drizzle the olive oil if using, and toast bread cubes on medium heat for 6-7 min stirring occasionally until crisp on outside yet still soft on inside.
Whisk together all Dressing ingredients. To assemble salad, place greens into large serving bowl. Top with roasted peppers, feta, croutons, tomatoes, and red onion. Drizzle with desired amount of dressing and toss.
