This Pineapple Orange Sunshine Juice is a refreshing and absolutely delicious blend of pineapple, orange, cucumber, ginger, and lemon juice. It's a delicious way to enjoy nourishing ingredients, with light sweetness and big flavors.

Juice of 1 lemon
Cut ends off pineapple. Stand pineapple upright and remove skin by cutting downwards around sides of pineapple. To remove the brown “eyes” of pineapple, make shallow, diagonal v-shaped cuts down the pineapple, around eyes. Dice half the pineapple into small chunks and add to a high-powered blender. Save other half for another recipe, or another batch of juice.
Cut ends off 2 navel oranges and stand upright. Remove orange peel by cutting downwards around sides of oranges. Dice oranges and add to blender. Peel the ½ inch nub of fresh ginger and grate it into the blender.
Dice ½ hothouse cucumber and add to blender (to avoid green color, you may optionally peel the cucumber first). Squeeze in juice of 1 lemon.
Blend until smooth. Place a fine-mesh sieve over a large mixing bowl. In batches, pour contents from blender into sieve, using a spatula to gently press the juice through sieve, moving the pulp around with spatula.
Serve with orange wedges if desired.
*If you'd like a sweeter juice, feel free to add in the juice of 1 additional orange into the final product, which would be 3 total oranges.
