Watermelon Strawberry Smoothie Bowl

This Watermelon Strawberry Smoothie Bowl is a refreshing and vibrant blend of juicy fresh watermelon, frozen strawberries, mango and fresh lime juice. With additional nutrients from frozen cauliflower and optional vanilla protein, this bowl is a super satisfying summer treat!

Ingredients

  • 4 cups diced seedless watermelon
  • 2 frozen bananas
  • 2 cups frozen strawberries
  • ½ cup frozen cauliflower
  • ½ cup frozen mango
  • ¼ cup full-fat coconut milk
  • ¼ cup water
  • Juice of ½ lime
  • 1 to 2 scoops Sprouts Vanilla Vegan Protein powder optional
  • 1/3 cup shredded or desiccated coconut
  • Lime wedges for garnish

Instructions

  • Into a blender, add 2 of the cups of diced seedless watermelon, 2 frozen bananas, 2 cups frozen strawberries, ½ cup frozen cauliflower, ½ cup frozen mango, ¼ cup full-fat coconut milk, ¼ cup water, juice of ½ lime, and optional protein powder.
  • Blend until smooth, scraping down the sides of the blender as needed. Add more water or coconut milk to thin, as desired.
  • Divide into bowls and top evenly with the remaining 2 cups diced watermelon. Sprinkle evenly with the 1/3 cup coconut and lime wedges for garnish.
